The farm has been in Jack’s family for over 200 years, and though he first bought bison in 2001, old land deeds indicate that bison once roamed in Person County. He saw his first buffalo on a backpacking trip to New Mexico in 1964. On the ride home, the bus driver was bragging about the buffalo steaks he’d eaten while the hikers had been roughing it on the trail. Later on, Jack became interested in raising bison on the family farm when he learned of the meat’s health benefits. For a nutritional comparison with other meats, as well as pictures and recipes, see their website. Jack currently serves on the Board of Directors of the National Bison Association representing 11 southeastern states.
