The central values of Italian cooking are to cook local, seasonal and simple with minimal processing. Melina’s Fresh Pasta was founded on these principles and continues to practice them today.
On ravioli making day, a team of pasta makers work together make the pasta dough and ravioli fillings and then to assemble and package 400-500 dozen ravioli. Regular rotations of traditional flavors of ravioli are produced such as 3 cheese, Spinach, and Mushroom, plus our award winning Pimento Cheese Ravioli. Gourmet and seasonal varieties include Fig & Gorgonzola, Pumpkin and, customer favorite, Lemon Ricotta.
Minimal but quality ingredients are used - most ravioli fillings have only 3-4 ingredients. Fresh vegetables are peeled and lemons are zested by hand (115 per batch for Lemon Ricotta filling). Lasagnas are assembled layer by layer using freshly made sauce. Cheeses are grated from blocks by hand to eliminate the fillers and additives used to prevent clumping.
Melina’s Fresh Pasta attends the Saturday Market year-round.
