Pork Stew

Ingredients:

  • 4 lbs. pork chop, ham steak *(can also use pork neck bones)

  • 2-3 qts. tomatoes

  • 1 head garlic cloves smashed

  • 4 jalapeños chopped

  • 2 tbsp. cumin

  • 1 tsp salt

  • 4 lbs. vegetables to roast (potatoes, sweet potatoes, radishes, turnips, peppers, onions, etc.)

  • 4 peppers (sliced or diced to preference)

Directions:

  1. Brown pork chops or ham steak.

  2. Place pork and juices into crockpot or roasting pan.

  3. Sprinkle salt, cumin, jalapeños, and garlic on pork  and pour tomatoes over pork evenly. 

  4. Cook for 3-4  hours (in crock pot or 300F oven) or until bones pull out easily.

  5. Meanwhile roast: 4lbs vegetables (potatoes, celeryroot, radishes, turnips, onions, etc), 4 peppers (sliced or diced to preference). Distribute 2 tbsps. rendered lard or oil in pan. Spread cut vegetables evenly in pan and sprinkle with salt. Place pan in 400 degree oven, change to broil and roast  turning until browned.

  6. After removing bones add roasted vegetables to pork and let simmer for at least 1 hour or longer to meld  flavors.

  7. Serve as stew or over rice.

 *Suggested if using neck bones, broil on all sides until dark (approx 30 min)
